Granola is one of my favorite foods and has been since I was a kiddo. While baked granola is delicious, I started making this raw granola inspired by chia pudding a couple years ago when I was experimenting with a raw foods diet. It's delicious and super easy to make (and you don't have to wait for the chia to turn into pudding). I actually prefer it now to baked granola because it tastes so fresh and I don't prefer nuts to be cooked (they're so much healthier raw!)
Here I used apples because they're coming into season and I really wanted the crunch. Of course, other fruit like berries, bananas, persimmon, or passionfruit could be used as well. You can get creative with the ingredients and make it your own.
Ingredients
1 apple - diced
1 T chia seeds
2 T hemp hearts
2 T shredded coconut
2 t cacao nibs
2 T chopped walnuts
2 t honey/maple syrup
dash of nutmeg
couple dashes of cinnamon
2/3 c milk of choice
Divide the apples, chia, hemp hearts, coconut, cacao nibs, and walnuts between two bowls. Drizzle 1 t honey or maple syrup over each bowl. Sprinkle a dash of nutmeg and a couple dashes of cinnamon on top. Pour 1/3 c milk over each. Stir and enjoy.
