Overnight Oats


Overnight oats are scrumptious and healthy and have quickly become one of my favorite breakfasts/snacks/desserts. Since the oats aren’t cooked they remain chewy and are absolutely delicious. They have inherent sweetness and don't need much in the way of added sugar beyond some fruit and maybe a little drizzle of honey or agave. Once the oats and other ingredients have soaked the variations for toppings are endless. I’d love to know what flavor combinations you come up with so please share!

Ingredients 5 heaping cups rolled oats (I use thick cut) 2 cups steel cut oats 2.5 cups unsweetened coconut flakes 1/4 cup cacao nibs 1/2 cup chia seeds 1 T cinnamon 1 T golden milk powder  1 t cardamom 1/8 t salt Procedure Combine all dry ingredients and store in a glass jar. When ready, use 1:2 ratio of dry mix to the milk of your choice (1 cup of mix and two cups of milk yield for me two to three portions of the porridge.) Cover and refrigerate for at least 8 hours. Serve as is or with toppings like fresh fruit, nuts, seeds, sweetener.  Pictured here the oats are topped with blueberries, hemp hearts, honey, and a little extra golden milk powder. Yum!!
